I had bought a big bag of anjeer from Costco. Initially, we all enjoyed them as they were. However, later, they were sitting in my fridge, and as we got bored of eating them as is, I decided to make good use of the last remaining anjeer. I gave it a try, and everyone liked it. However, my daughter wanted it coated in chocolate. So, I bought some chocolate, melted it, and poured it over the anjeer, spreading it evenly. It turned out to be a hit!
How to make Anjeer Burfi :
Start by soaking the anjeer in water. Pulse the anjeer in the food processor and set it aside. Prepare the other ingredients listed. Begin by adding some ghee to the pan, then add the anjeer paste. Sauté for some time and follow with dates. Once the dates incorporate well into the anjeer, add all the dry fruits and give it a mix. The paste should leave the pan while mixing, indicating that all the water content is absorbed, ensuring a good shelf life. Press this mixture onto a greased plate, shaping it gently as desired, and allow it to cool completely. Pour some melted chocolate over the burfi and spread it evenly. Allow it to set in the fridge, then cut it into the desired shape and enjoy.

Anjeer Burfi
Ingredients
- 1 cup anjeer/figs
- 1/4 cup dates
- 1/4 cup plums/apricots
- 1/4 cup makhana/foxnuts powder
- 2 tbsp pumpkin seeds
- 2 tbsp sunflower seeds
- 2 tbsp sesame seeds
- 1 tbsp khus khus
- 1 cup mixed dry fruits cashew, almonds, walnuts
- 2 tsp ghee
- 1/2 cup white chocolate chips
Instructions
- Soak the anjeer/figs in hot water for at least 30 minutes, then process them in a food processor.
- Chop dates, and plums/apricots into small pieces.
- Roughly chop the mixed dry fruits (cashew, almonds, walnuts).
- In a pan, dry roast the roughly chopped mixed dry fruits (cashew, almonds, walnuts), pumpkin seeds, sunflower seeds, sesame seeds, and khus khus until lightly toasted. Set aside.
- Dry roast makhana/foxnuts until crunchy, allow it to cool, and grind in a food processor.
- Heat 2 tsp of ghee in a pan.
- Add figs paste and cook until the water evaporates. Then, add in dates and plums/apricots to the pan. Cook on low heat until the fruits become soft and mushy.
- Add the chopped mixed dry fruits, makhana, pumpkin seeds, sunflower seeds, sesame seeds, khus khus to the pan. Mix thoroughly.
- Transfer the mixture to a greased tray or plate and press it down evenly.
- Melt the white chocolate chips either in a double boiler or in the microwave.
- Pour the melted white chocolate onto the set tray and spread it evenly.
- Place the tray in the refrigerator for a few hours to set the burfi.
- Once set, cut the burfi into desired pieces.
