In a pan bring water to boil. Add salt(if using), ghee/oil(optional).
Gradually add the flour while stirring continuously. Use a spoon or spatula to mix the flour and water until it starts to come together.
As the dough begins to cool down a bit, you can start kneading it with your hands. Knead the dough for a few minutes until it becomes smooth and pliable. If the dough feels too sticky, you can add a little more jowar flour.
Once the dough is ready, cover it with a damp cloth or plastic wrap and let it rest for about 10-15 minutes. This resting period allows the flour to absorb the moisture evenly.
After resting, divide the dough into small, golf ball-sized portions. Roll each portion into a smooth ball between your palms.
Take one of the dough balls and flatten it slightly with your hands. You can either use a rolling pin or your hands to roll it out into a circular shape. If using a rolling pin, lightly dust the work surface and the dough with jowar flour to prevent sticking.
To make Jowar Bhakri, first, roll the dough into a small circle. If you notice the corners starting to break, dust the dough with flour. Then, use your fingers to gently seal the edges and continue rolling it out thinly.
This will help prevent the dough from sticking and breaking while rolling. Additionally, the thinness ensures even cooking and a better texture for the Bhakri.
Heat a flat skillet or tawa on medium-high heat. Place the rolled-out jowar bhakri on the hot tawa and cook for about a minute on each side.
Once you see brown spots on one side, flip the bhakri to the other side and cook for another minute or so. You can press down gently with a cloth or spatula to help it cook evenly.
Remove the jowar bhakri from the tawa and serve it hot with your favorite curry, chutney, or vegetable dish.
